Combine ponzu sauce with caramelised sugar, lemongrass, soy sauce and sriracha. Reduce, finally add finely diced red peppers and shimeyi mushrooms. |
Fry the loose marinated thigh (fryer 4.5-5min / 175°C) and the wedges (fryer 3-4min / 175°C). |
Serve in a bucket topped with the sauce. |
