Oil | 150 ml |
Shimeji mushrooms | 300 g |
Piri piri peppers | 5 g |
Chinese broccoli | 300 g |
Pak choi cabbages | 300 g |
Chives | 50 g |
Roasted sesame | 5 g |
Ingredients for the sauce: | |
Soy sauce | 300 ml |
Sugar | 250 g |
Sriracha sauce | 2 g |
Mirin Sauce | 300 ml |
Cut the beef ribs into individual cubes, place on a baking tray and roast in the oven at 180°C for about 8 minutes. |
Heat the fat in a frying pan and fry the small potatoes cooled, after 2 minutes add the shimeji mushrooms, Chinese broccoli, cut pak choi cabbage and caramelise. Finally, add the sesame seeds. Pour the rib sauce over everything. |
Pour the soy sauce into a saucepan, add the sugar, Mirin and Srirache sauces. Bring everything to a simmer and reduce. 4. Place the vegetables on a plate along with the potatoes. Serve 3 cubes of ribeye for 1 serving and pour over the sauce. Sprinkle the whole thing with fresh chives and sesame seeds. |
