Boil the eggs (6 minutes), peel them and marinate them in teriyaki sauce for 12 hours. |
Broth: Place the meat (leg, ribs, wings) in a large pot, cover with cold water and bring to the boil. After 10 minutes, drain, rinse the meat and the pot, then pour 5 litres of fresh water back in. |
Cook on a low heat for 4-6 hours, collecting the scum. Once cooked, strain, separating meat from bones. |
Extras: Prepare the loose thigh and gyoza dumplings according to the instructions on the packet. |
Blanch the pak choi cabbage in boiling water for 2 minutes. |
Cook the pasta according to the instructions on the packet. |
Serving: Place cooked pasta in bowls. |
Add the pak choi and half an egg, and pour the broth over the whole thing. Arrange the sliced thigh and one dumpling on top. |
Sprinkle with sesame seeds. |
