| Rib sauce | |
| Oil | 150 ml |
| Shimeji mushrooms | 300 g |
| Piri piri peppers | 5 g |
| Chinese broccoli | 300 g |
| Pak choi cabbages | 300 g |
| Chives | 50 g |
| Roasted sesame | 5 g |
| Ingredients for the sauce: | |
| Soy sauce | 300 ml |
| Sugar | 250 g |
| Sriracha sauce | 2 g |
| Mirin Sauce | 300 ml |
| Cut the beef ribs into individual cubes, place on a baking tray and roast in the oven at 180°C for about 8 minutes. |
| Heat the fat in a frying pan and fry the small potatoes cooled, after 2 minutes add the shimeji mushrooms, Chinese broccoli, cut pak choi cabbage and caramelise. Finally, add the sesame seeds. Pour the rib sauce over everything. |
| Pour the soy sauce into a saucepan, add the sugar, Mirin and Srirache sauces. Bring everything to a simmer and reduce. 4. Place the vegetables on a plate along with the potatoes. Serve 3 cubes of ribeye for 1 serving and pour over the sauce. Sprinkle the whole thing with fresh chives and sesame seeds. |
