| Put the beef cheeks with the sauce into a saucepan and heat over a low heat for about 7 min. |
| Pour the stock into the pan and add the mashed potatoes. When it becomes a uniform consistency, add a little salt and butter, stirring to combine all ingredients. |
| Peel the carrots, blanch, transfer to a pan and caramelise. Add: nuts, honey and watered down with wine. Reduce until the wine has evaporated. Finally, add the butter (30g). |
| Boil the beetroot, cut into irregular pieces and put into a saucepan. Add the sugar, raspberries and red wine. When the wine has evaporated, add the butter (140g) and season with pepper. |
| Season the sauce from cheeks with sugar, brandy and grape vinegar. Once you have the right flavour, thicken with a some butter. |
| Place the mash potatoes and beef cheeks on a plate. Arrange the beetroot and carrots along with the nuts on the side. Pour the sauce over the beef cheeks and serve. |
