Potatoes "wedges"1.5 kg
Sauerkraut1 kg
Smoked plums100 g
Sweet cabbage1.3 kg
Onions30 g
Cuts of game meat - Shoulder300 g
Kielbasa Myśliwska150 g
Tomato concentrate2 tablespoons
Bay leaves5 pcs.
Allspice10 pcs.
Sugar50 g
Red wine150 ml
Chanterelles for decoration150 g
Garlic10 g
Butter30 g
Oil30 ml
Ribs - heat 30 min, in a water bath at 80 degrees.
Fry the venison and sausage in the oil, followed by the onions.
Add the sauerkraut, bay leaf and allspice. Boil.
Add sweet cabbage, tomato paste and red wine.
Season to taste with salt, sugar, sweet and smoked paprika.
Cook until tender.
Prepare the wedges potatoes in a deep fryer.
Garnish the ribs with fried chanterelles, serve with crispy potato wedges and bigos.
